Partridge Satay
Preparation
Serves 2
Ingredients:
- 4 partridge breasts
- 1 garlic clove crushed
- 2cm piece of ginger, grated
- 2 sticks of lemongrass chopped
- 1tbsp sunflower oil
- 2 kaffir lime leaves shredded
- 1tbsp soy sauce
Peanut sauce:
- 2 birds eye chilli finely chopped
- 5 shallots finely chopped
- 2 garlic cloves chopped
- ½ tsp shrimp paste
- 1tbsp sunflower oil
- 150ml coconut milk
- 2tbsp palm sugar
- 150g peanuts roasted and chopped
- 1tbsp soy sauce
- 1 juice of lime
INSTRUCTIONS:
- Cut each breast into 3 strips.
- Combine the other ingredients and marinade the strips for a minimum of 30 mins.
- Heat a grill pan.
- In a food processor combine the shallots, garlic, chilli, shrimp paste, oil and sugar.
- In a frying pan gently fry the resulting paste for 4-5 minutes, stirring to stop it sticking.
- Add the coconut milk and bring to the boil then add the peanuts.
- Cook until thickened then add the soy and the lime juice.
- Skewer the partridge meat and grill for 1-2 minutes each side.
- Serve immediately with the sauce.
