Wild Venison

Our wild venison comes predominantly from fallow and roe deer. The majority of the deer culled come from large estates and parks along the South Downs, as well as National Trust and Forestry Commission land. Our venison has a fine textured grain with a delicious subtle flavour without being strong. We hang the deer for 7-14 days depending on the age and size of animal to ensure the tenderness and all round quality. It is a naturally lean meat with little fat and is therefore a fantastic addition to any family’s weekly menu.

    Wild Venison Braising

    • Cubed meat from the neck and shoulder.
    • Ideal for a delicious and flavoursome stew, casserole or pie.
    • The braising steak comes in 3/4inch cubes, making it a versatile cut that can be used for a quick family chilli or a slow-cooked casserole.
    • The burgers are made using the tender meat of the shoulder.
    • We mince the meat and then simply add sea salt and black pepper; nothing else!

  • Wild Venison Neck

    • A low-cost cut for those who want to cook slowly at a low temperature.
    • Braised in wine or stock, the meat will fall off the bone giving a delicious rich, sticky casserole.
    • Our sausages are handmade using carefully selected ingredients and we use natural hog casings.
    • We use oats rather than rusk, for a coarser finish.
    • The sausages can be grilled, oven-cooked or fried.
